This is an easy and delicious recipe. I usually make a dozen of these types of muffins each Sunday, and wrap up 2 at a time and freeze a bunch. This way during the week when I’m to tired to cook something healthy, ad need to eat without a lot of angst, I just pop a few of these in the microwave. Yummy! You can alternate the ingredients as needed… Swiss cheese and artichokes, sun-dried tomatoes and feta, etc..
